They set the chairs, tables, linens and all so to make sure that everything is in condition and in its right places.

Instead of letting the guests line up, they already serve these meals so to keep everybody comfortable and entertained while the jazz is playing. They have their waiters that will deliver the meals to the tables. They have to attend to the different needs of different and many guests present.
